Meet Aaron Vandermark, Chef Proprietor of Hillsborough’s Panciuto. In college, Aaron went from working in finance to working with food, and fell in love with the camaraderie and the ever changing nature of working in restaurants. Panciuto itself has evolved along with Aaron and the community, but as always, thoughtful food remains the frame that keeps Panciuto sustainable. Aaron uses Firsthand Foods because it provides a network of farmers that abide by philosophical and humane standards that are important, and that he personally believes in.
