Tender Beef Kebabs

One of my favorite meals to make on the grill is kebabs.  It is the summertime equivalent of well-rounded and nutritious one-pot winter meals. Tender chunks of Firsthand Foods beef combined with seasonal vegetables, and a grain of your choosing make for a healthy and delicious meal that is adaptable to the seasons and to individual palates.

Marinating the meat helps to ensure flavor and tenderness.  One helpful hint when making kebabs is to ensure that pieces of meat and onion are touching when assembling them on the skewer.  This helps to add flavor to the meat.  Brushing the remaining marinade over the assembled kebabs also ties the flavors together.  Remember to cut your vegetables so that they are all similar sizes. This will aid in even cooking.  If you don’t have a grill, this recipe also works well under the oven broiler.

Whether you plate your kebabs on a bed of rice, couscous, or wheat bulgur, make sure to season this accompaniment by cooking it with vegetable or meat stock.  You can also add onion and garlic to the stock to give it more depth of flavor.

Kebabs are a great choice for parties or family dinners because they can be individualized.  They are also super easy to clean up!  Use this recipe as a template and create your own favorite flavor combinations.


Ingredients

  • 1 package Firsthand Food Beef Kebab pieces
  • 1 large red pepper, seeds removed and cut into 1 ½ inch pieces
  • 1 large green pepper, seeds removed and cut into 1 ½ inch pieces
  • 1 small red onion, quartered
  • ½ c. olive oil
  • 1/3 c. fresh lemon juice
  • 2 tbs. chopped fresh rosemary
  • 4 large garlic cloves (minced)
  • Salt/pepper
  • Other vegetable options include red pepper, cherry tomatoes, and mushrooms

Instructions

  1. Place the olive oil, lemon juice, rosemary, garlic, salt and pepper in a bowl.  Whisk to combine and add the kebab meat.
  2. Cover and refrigerate for at least 4 hours up to 24 hours.
  3. Assemble the kebabs alternating the meat with the vegetables, ensuring that each piece of beef is next to a piece of onion.
  4. Brush the kebabs with the remaining marinade.  Sprinkle with additional salt.
  5. Grill the kebabs over medium heat for about 8 minutes per side or until vegetables begin to soften and char on the edges.
