Beef and Chorizo Burgers

We are often asked, “What should I make with your chorizo?” The easy answer is chili, queso fundido, or tacos. These seem to be the go-to recipes for bulk ground chorizo, but here is a secret: you can use chorizo in just about any recipe that calls for ground pork. I find that it adds a great flavor and richness to burgers, too.

In a time when the “Build a Better Burger” theme is trendy, this recipe gives a delicious foundation to a winning burger. Grilled or pan-fried, this creative combination of chorizo and ground beef will change the way you think of burgers. This recipe can be tweaked to suit all kinds of palates and the options for toppings are endless. For a nice added touch, find brioche buns at your local bakery and toast them. Toasting them makes the juicy burger and the condiments soak into the bread more slowly. Plus, the lightness of the brioche bun lets you really taste the ingredients in the burger.

Ingredients

  • 1 pkg Firsthand Foods ground beef
  • 1 pkg Firsthand Foods chorizo
  • 2 garlic cloves – minced
  • ½ tsp. Spanish paprika
  • 1 tsp. salt
  • 1/8 tsp. black pepper

Instructions

  1. Place beef and chorizo in a large bowl.  Add garlic, paprika, salt, and pepper.
  2. Using clean hands, thoroughly mix the ingredients.
  3. Shape the mixture into patties and place on a sheet pan.
  4. Heat a cast iron skillet over medium high heat.
  5. Cook the patties for 3 minutes.  Flip and cook for another 4 minutes or until patties are browned and firm under slight pressure.
  6. Serve on buns with your choice of toppings.
