Meat Descriptions:

Petite City Hams — brined & smoked, these pasture-raised (3-4 lb) hams get their name because they are less salty than their “country ham” cousins. Easy to heat and serve!

Lamb Racks & Roasts – Prized by area chefs, our pasture-raised lamb has an exceptionally clean flavor. Both loin roasts and racks available (2-3 lbs each).

Beef Manhattan Roasts – this classic boneless roast is the same cut as the NY strip and weighs approximately 3-4 lbs. Great for slow roasting!

Beef Tenderloin (Filet Mignon) – the most tender and lean beef cut, a whole tenderloin weighs 5 -7 lbs and will feed a large party.
